This $2 high-protein lunch helped me lose 90 pounds

Call it her recipe for success.

A fitness fanatic who shed nearly 100 pounds has revealed the cost-efficient, rich-in-protein repast that helps keep her weight in check — and it doesn’t even take that long to prepare.

In a post to social media now viewed nearly one million times, Emma Logsdon, 23, urged her followers to try the cheap lunch of chicken, vegetables and rice she depends on to get through her day.

The influencer’s favored midday meal includes a whopping 40 grams of protein, comes out to about $2 per serving, and can easily be prepped ahead.

“You can’t even go to a fast food restaurant and get a meal for $2,” she told viewers.

Logsdon starts building her frugal feast with about 3/4 cup of cooked white rice, which she buys in bulk from Sam’s Club and prepares ahead of time.

“Every four days or so I make four servings at a time, that way I just have it ready in my fridge,” she said. “Whenever I need to make a meal, all I’ve got to do is put it in a bowl and pop it in the microwave and it’s ready to go.”

One serving costs her about 8 cents, she estimates.

Up next is about 1/3 cup of pre-microwaved green beans for about 50 cents per lunch — a bag with four servings costs Longdon less than $2 at her local supermarket.

Then comes four ounces of easily pre-made chicken.

“Literally all you have to do is get chicken breasts, snip into little bits, season how you want, and then throw it in the air fryer.”

The deal-hungry Logsdon waits for the best deals to keep this part of the meal cost-efficient. She finds it at about $2.30 per pound.

“I scout out when Sam’s Club, Walmart, [and] Kroger are doing their discount sales on their meat,’ Logsdon said. “I will stock up then and just throw it all in the freezer — that way I am not spending a stupid amount of money on chicken every single week.”

Once ready to eat the prepped meal, she microwaves it all for about a minute.

“The last thing I add is a little mashed avocado cup. I get these from Sam’s Club,” the influencer added. “I do this because I’m lazy. If you want to save even more money, just find avocados on sale.”

The meal winds up being about 472 calories, with 48 grams of carbs, 13 grams of fat, and 40 of protein — at the cost of $1.70 per bowl.
